Eating Vegan. Another run to Whole Foods!

Eating Vegan

Tomorrow will be my first Vegan Turkey Day.  I am not just a vegan, either. I have given up sugar, oil, and salt.

So, that leaves vegetables, fruits and beans.  I have dropped about 10 lbs in 2 weeks. So, I am a happy camper.  One drawback…our food bill.  My hubby tends to cringe whenever I mention Whole Foods.

Eating vegan has been pretty easy.  However, I did not know what I was missing until I went to Cutting Edge yesterday in Chesapeake. They have a Blackened Vegan Chicken dish that is a.m.a.z.i.n.g.

The whole time I was eating it, I was trying to figure out how they made it sooooo goooood.  Tofu, I am sure.  But, I digress.  Tomorrow is about sweet potatoes, stuffed mushrooms, and pumpkin pie smoothies.

Whole Foods to the rescue!

They open at 8am.  From Kempsville, it is a quick run.  I need to be there when the doors open.  The place has been a madhouse the last couple of days.

There is a sweet potato dish I found on the Whole Foods website and some incredibly sounding stuffed mushrooms I have to try!  The highlight of the meal for me will be my pumpkin pie smoothie.

Next Google search: a coconut milk whipped cream recipe!
